Whitewater Snacks in the GCH (enter off DCA across from GRR).

Bengal BBQ is reasonably healthy - they have grilled meat and veggie skewers and yummy dipping sauce.

You can't go wrong with fresh pineapple from the stand in front of the Tiki Room.

I know there's a lot more, but there's a good start.

Fruit carts are around the park (Main Street, Adventureland, Critter Country are the three I can think of off the top of my head. They have bags of fresh fruit and veggie boxes.

When you say healthy, what are you looking for? El Zocalo has a grill area that has healthy options. I would consider the chicken tacos there healthy, too. Saturday night at Catal I had gazpacho with shrimp and avocado in it. Tasty and rather healthy, imo.
