Ok, so in another thread the other day, Shawnarae posted a receipe for the Monte Cristo sandwich...which got me to thinking...Does anyone else have any Disneyland receipes? They would make for great snacks for this "Disneyland Party" that I'm planning on having. Ok, I know it's kinda funny, but my sister works at the Disney Store, so it'll be something fun to do with her co-workers/friends. I'm planning on attempting to make a DVD out of all the ride videos on VisionsFantastic (don't know if it'll work, but I'm going to try...if anyone else has attempted this, let me know if you got it to work or not, and how you did it!) and then playing that in the background while we play the Haunted Mansion Clue and Pirate Life games that I just HAD to have.

they used to have them in the disney magazine ,,,,:crying:...there area couple of books out as well. I can't think of the names though.

I have a Disney cookook but it isn't exclusively Disneyland. What type of recipe are you looking for?

Also check out Family Fun website (http://familyfun.com) The magazine is owned by Disney and they have a LOT of Disney recipes online there.

Oh...I have a Disneyland/Disneyworld cookbook from 1998 or so. I will see what classic recipes are on there & either post or PM them to you :) Let me get it out.

OK, this is called
"Poires Framboises" (Pears in Raspberry sauce)
from Club 33 in New Orleans Square

PEARS
4 pears, fresh 1 cup of white wine
1 cup water 1 cup of sugar
Peel pears and remove core from bottom, leaving stem intact. Bring water, wine & sugar to a boil in a saucepan just lareg enough to hold pears. Simmer pears in the syrup just until tender (about 5 minutes). Let pears cool in cooking liquid. Set aside.

SABAYON SAUCE
2 1/4 cups Sauternes Wine, divided 1 whole egg
1/2 cup sugar, divided 2 tablespoons cornstarch
1 egg yolk 2 tablespoons pear liqueur
Bring 2 cups of wine to a boil. Add 1/4 cup of sugar and simmer on low heat.
Mix remaining 1/4 cup wine, 1/4 sugar, egg yolk, whole egg and cornstarch until thoroughly blended and cornstarch is disolved. Add some of hot wine to mixture, stirring with a wisk, then gradually add egg mixture back into remaining hot wine, mixing until sauce returns to a boil. Continue whisking to prevent eggs from scrambling. When sauce is thick, remove from heat and stir in liqueur.

RASPBERRY SAUCE
1 cup good raspberry preserves 1 cup raspberries, frozen,thawed
Combine preserves and thawed raspberries and beat well. Strain through a fine sieve to remove seeds.

**To serve, remove pears from surup and drain well. Divide Sabayon sauce in 4 dessert dishes. Stand pears upright in sauce and spoon raspberry sauce over pears.

We absolutely love the french toast at story tellers. I wanted to make it for my husbands bday, so I called and the were super nice and faxed me a copy. Long story short I didn't make it half has good as the original and vow not to ruin a favorite like that again, but the moral to the story is that it only took a simple phone call for a favorite recipe!

Here's the recipe for Disneyland hamburgers:

1 pound ground beef
2 buns

Form beef into patties. Grill for 1 hour or until pattie is bone dry. Put patties in buns, add as few condiments as possible.

There should be a recipe for "Pumpkin Fudge" online somewhere. It's a treat on Main Street during the holidays. Yummy!

Funny you should mention it, I just got done whipping up 3 gallons worth of Disneyland Mint Julep Syrup for our party tomorrow:

New Orleans Square Mint Julep Recipe
Yield: Approximately 2/3 gallon
Ingredients

1 cup Sugar
3 tsp. Lime Juice Concentrate
3 cups Soda Water
6 tbsp. Torani Crème DeMenthe (hard to find, but this is important)
6 oz. thawed Lemonade Concentrate

Directions

Dissolve sugar into soda water. Add lime juice and lemonade and bring to boil. Remove from heat and add Crème DeMenthe. Chill. To serve, combine 3 parts syrup to 5 parts water. .

Blue Bayou
Roasted Red Pepper Dressing
Chef Ricky Hidalgo

Ingredients

2 Cups Roasted Red Pepper Puree
1 Pinch Cayenne Pepper
1 Pinch Black Pepper
2 Cups Italian Dressing
1/4 tsp. Salt (To Taste)

Preparation

1. Rub peppers with salad oil. Roast about 1.5 pounds of red bell peppers, either over the flame or by placing the peppers in the oven at 400 degrees. Bake peppers for about 10 minutes or until the skin looks brown in color, as soon as they come out of the oven put them in a plastic bag and let them rest for about half an hour. Peel the peppers, get rid of all the skin and seeds. Put the peppers in a blender to make the puree.
2. Mix all the ingredients in a bowl and combine together well.

Marinara Sauce

Ingredients

1- 1.5 C. Diced Tomatoes
4 C. Tomato Sauce
3/4 C. Onion, Finely Chopped
2 T. Garlic, Finely Chopped
2 T. Olive Oil
Pinch of each: oregano, thyme, basil, sugar
salt and pepper to taste.

Preparation

Sauté onion and garlic in olive oil until lightly brown. Add tomato sauce and diced tomatoes. Simmer for 15 minutes, stirring often. Add remaining ingredients and continue simmering for 15 minutes. Adjust seasonings to taste.

Stuffed Andouille Mushroom
Chef Ricky Hidalgo

Ingredients

4 Mushroom Cups
1/2 oz. Green Bell Pepper
1/2 oz. Yellow Bell Pepper
2 Tbsp. Olive Oil
1 Pinch Salt
3 oz. Andouille Sausage
1/2 oz. Red Bell Pepper
1/2 oz. Red Onion, thin sliced
2 Tbsp. Balsamic Vinegar
1 Pinch White Pepper

Preparation

1. Stuff mushroom cups with Andouille sausage and place them on a cookie sheet.
2. Place mushroom in preheated oven for 350 degrees and cook for approximately 15 minutes or until they reach the 155 degree internal temperature. Place on the side.
3. In a sauté' pan, add the oil, bell peppers and onions. Cook for approximately 4 minutes or until the onion looks translucent. Add vinegar and cook for 30 seconds, add the salt and white pepper.
4. Place this pepper mix on a medium plate with the stuffed mushrooms on top.

Root Beer Spiced Apples

Ingredients

2 lbs. Granny Smith Apples (About 4 large)
6 oz. Brown Sugar
2 Tbsp. Cinnamon
1.5 tsp. Cornstarch
2.5 Cups Root Beer Soda
1 tsp. Nutmeg
1/8 tsp. Ground Cloves
1.5 tsp. Water (Cold)

1. Core, peel and cut apples into wedges.
2. Combine root beer, nutmeg, cinnamon and cloves into a saucepan. Bring to a boil and stir frequently.
3. In a separate bowl, mix cornstarch and a little water to make a thin paste.
4. When the mix starts boiling, add the cornstarch mix and stir well.
5. Add the apples and bring to a boil. Reduce heat and let it simmer for 10 minutes. Stir frequently.

Cajun Seafood Salad

Portabello Marinade Ingredients

3 oz. Baby Mixed Field
4 oz. Roma Tomato Julienne
4 oz. Yellow Squash
4 oz. Yellow Bell Pepper
8 oz. Crayfish
12 Stalks of Chives
1 Avocado, peeled and sliced
4 oz. Zucchini
4 oz. Red Bell Pepper
8 oz. Bay Shrimp
2 Oranges cut into segments
8 oz. Cajun Citrus Dressing

Preparation

Cut chives 1 inch long. Mix all ingredients well except the avocado and chives. Place avocado on top.

Cajun Citrus Dressing Ingredients

1/2 Cup Salad Oil
2 tsp. Orange Zest
1.5 oz. Sherry Wine
1 tsp. Soy Sauce
1 Pinch Black Pepper
1/4 tsp. Chef Paul Prudhommes Blackened Redfish Magic
1.5 tbsp. Dijon Mustard
1 tbsp. Balsamic Vinegar
2 tbsp. Parsley, Chopped
1 Pinch Salt
1 tsp. Orange Juice
1 tsp. Lemon Juice

Preparation

1. In a large mixing bowl using the wire whip add mustard.
2. Start whipping at #2 speed and add orange zest. Slowly add oil to emulsify with mustard until the mix starts getting thick.
3. Slowly add the Balsamic Vinegar. Repeat step #2. Slowly add Sherry Wine. Repeat Step #2. Add the parsley. Slowly add the soy sauce.
4. Add the salt, black pepper and Redfish Magic seasoning, finish by adding the lemon and orange juice.

Caesar Salad

Ingredients

1 clove garlic, crushed or put through a press
1 teaspoon Worcestershire sauce
3 Tablespoons vinegar
1 egg, coddled (cooked in shell for 1 minute)
3/4 teaspoon Dijon Mustard
1 head romaine lettuce, torn into 2-inch pieces
1/2 cup croutons
1/2 lemon
Parmesan cheese
Pepper, freshly ground

Preparation

In a small bowl, combine crushed garlic, Worcestershire sauce, vinegar, and egg. Add a grind or two of fresh pepper and mix well. Clean and dry lettuce on paper towels and add to mixing bowl with dressing. Toss lettuce, coating each piece well. Add croutons and sprinkle entire salad with Parmesan cheese. Toss again and serve immediately.

Roasted Garlic Mashed Potato

Ingredients

3.5 lb. Whole Peeled Potatoes, cut in 1/4" slices
6.5 oz. Roasted Garlic
2.5 oz. Margarine
0.5 oz. Coarse Sea Salt
1 pinch White pepper
1.5 cup Water

Preparation
Place Roasted garlic and sea salt in a mixer and beat on slow speed until garlic is like paste. Add steamed potatoes and keep beating until potatoes are just broken. Add remaining ingredients, increase speed until smooth. Do not over whip.

Roasted Garlic Ingredients

6 oz. Garlic
1 tsp. Thyme, dried
0.25 cup Olive Oil

Preparation
Preheat the oven to 250 degrees F. Place oil, garlic and thyme in a bowl and mix to coat the garlic with the oil. Place the mix of garlic and oil on a sheet pan and spread evenly. Bake for 2 hours.

Seafood Salad

Ingredients

Lobster Tail, cooked, no shell 6 ounce
Celery, finely diced 1 tblsp.
Green Onions, finely chopped 1 tsp
Lemon Juice 1 tsp
Mayonnaise 2 tsp.
Dijon Mustard 1 tsp
White Pepper Dash
Tabasco sauce Dash
Salt To taste


Preparation

Slice four thin (1/8") lobster medallions for garnish.
Dice the rest into 1/4" cubes for use in salad mixture.
Combine all ingredients and store in refrigerator.


Garnish Ingredients

Cucumber, thinly sliced (approx. 22 pieces) 1/2 small
Smoked Salmon 2 slices
Cooked shrimp, shell off 2
Cooked crab claws 2
Enoki mushrooms 12 pieces
Diced Tomato 2 tblsp.
Radish sprouts 1 dozen springs
Edible flower 1
Whole dill 1 sprig


Preparation

Place cucumber slices around inside of a 2-3" cookie cutter on plate.
Fill with lobster salad mixture. Remove cookie cutter. Lay lobster
medallions on top. Garnish mold with tomato, flower, and dill. Roll salmon
slice around six mushrooms and garnish one on each side. Lay shrimp and
crab claws on sides of plate, garnishing with radish sprouts.

Walt Disney’s Personal Recipe
Walt’s Own Chili

Ingredients

2 pounds ground beef (coarse)
2 whole onions (sliced)
2 whole garlic cloves (minced)
2 pounds pink beans (dry)
1/2 cups celery (chopped)
1 teas. chili powder
1 teas. paprika
1 teas. dry mustard
1 can solid pack tomatoes (large can)
Salt (to taste)

Preparation

Soak beans overnight in cold water. Drain. Add water to cover 2 inches over beans and simmer with onions until tender (about 4 hours). Meanwhile, prepare sauce by browning meat and minced garlic in oil. Add remaining items and simmer 1 hour. When beans are tender, add sauce and simmer 1/2 hour.

Walt’s Oatmeal Cookies

Ingredients

2 c Flour
1/2 ts Salt
1/2 ts Baking soda
1 ts Baking powder
3/4 ts Cinnamon
1 1/3 c Butter
1 1/4 c Granulated sugar
3/4 c Brown sugar
2 lg Eggs
2 tb Water
1/2 ts Vanilla
2 1/2 c Uncooked oats/not instant
1 1/4 c Raisins

Preparation

In medium bowl, combine flour, salt, baking soda, baking powder and
cinnamon. Set aside. Cream butter in very large bowl. Beat in granulated
and brown sugars. Beat in eggs, 1 at a time. Add water and vanilla and mix
until well blended, about 4 minutes. Mix oats, raisins and flour mixture
into sugar mixture & stir until thoroughly blended. Drop by large
tablespoons onto ungreased baking sheet. Bake at 350 degrees 9 to 14
minutes, or until light-brown in color. Cool on baking sheet before
removing from pan. Makes 4 dozen.


Bengal BBQ
Tonkatsu Sauce (Chicken Marinade)

Ingredients

Teriyaki Sauce 1 cup
Soy Sauce 1 cup
Red Wine Vinegar 1 tblsp.
Brown Sugar 1 cup
Sherry Cooking Wine 1/2 cup
Whole Bay Leaf 2 each
Ground Black Pepper 1 tblsp.
Fresh Ginger Root 3 tblsp.
Fresh Garlic 2 tblsp.

Preparation

Mix ingredients and marinade chicken overnight in your refrigerator.

Tahitian Sauce (Chicken)

Ingredients

Whole Cloves 4 each
Red Wine Vinegar 1 tblsp.
Catsup 1 cup
Crushed Pineapple 1/2 cup
Pineapple Juice 1/2 cup
Brown Sugar 1/2 cup
Soy Sauce 1/2 cup
Orange Juice Conc. 1/4 cup
Water 3 tblsp.

Preparation

Simmer cloves in vinegar for 5-10 minutes. Strain cloves and add other ingredients.
Bring mixture to slow boil over medium heat.

Korean Sauce (Beef)

Ingredients

Soy Sauce 1 cup
Water 1 1/2 cup
Ground Black Pepper 1 tblsp.
Sesame Seed Oil 3 tblsp.
Ground Red Pepper 1 tsp.
Cayenne Pepper 1/2 tsp.
Fresh Garlic 1 tblsp.
Corn Starch 1 tblsp.

Preparation

Mix all ingredients except corn starch.
Bring to a slow boil over medium heat.
Add corn starch to thicken.

Great. :| Now I want it to be October and I want some Pumpkin fudge! (I like to mix mine with chocolate fudge... mmmmm)

In addition, you could get these recipes if you eat at the restaurants.

yikes!!!!! Look at all that cream and sugar....from now on my Dole Whip fix will be a meal instead of a snack :eek: .... also, I thought it was non-dairy?

ohhhhhhhhhhhhhhh, my favorite dish in the world are scalloped potatoes from the blue bayou, does anyone here have the recipe handy??? i would repay you with my top secret taco bell mexican pizza sauce recipe that i made up last week. my family could not tell the difference, and my bf worked at taco bell as a teen! i felt pretty darn good! :fez:
