If you had to select just ONE book about Walt Disney (the man), what would that book be?

"Walt Disney: An American Original" by Bob Thomas (the official family/studio authorized biography)

I would also highly recommend "Walt Disney: An American Original" by Bob Thomas.

"An American Original" is a "must read" biography of Walt Disney. If you could expand your category to two books about Walt Disney, Diane Disney Miller's "Walt Disney: The Man Behind the Myth" is excellent, too, filled with rare family photos. If you can expand your category to three items one of which doesn't have to be a book, get the DVD of "Walt Disney: The Man Behind the Myth". About the DVD, when you get to the part where employees learn of Walt's illness and death, do have Kleenex handy, for the poignant tears you're likely to shed.
