View Full Version : Dying for a recipe - Pickled Zucchini Relish at River Belle

Okay, I'll admit it - I became addicted to the pickled zucchini relish at the River Belle Terrace during my last visit. (Seriously, it was to die for.) I have searched all over the web for a recipe that even seems close, and have had no luck. I know some Disney recipes can end up provided to the public (as on allears.net) but I haven't found a winner yet.

Any ideas?

SERVES 240 , 8 -9 16 oz canning jars (change servings and units)

Ingredients

SOAK
10 cups zucchini
3 cups onions
4 red bell peppers
5 tablespoons salt
MIX
3 cups sugar
1 tablespoon cornstarch
1 teaspoon turmeric
3 cups vinegar
1 teaspoon dry mustard
1 teaspoon coarse black pepper
1 teaspoon celery seed
Directions
1SOAK.
2Grate zucchini in food processor, along with onion and bell peppers.
3Mix salt in with vegetables in large plastic bowl.
4Let stand overnight.
5Next morning, rinse thoroughly in a large strainer and drain well.
6MIX.
7Place shredded vegetables in large heavy pan and add remaining ingredients.
8Mix well and boil for 30 minutes.
9Pack and seal in hot sterilized jars

OK, I asked my mom who used to make this all the time when I was a kid and she said you can use and pickle relish recipe and just sub the zucchini for the cucumber. She never used bell peppers in her's I know that for sure.
