I can't think of any restaurants that do that in Anaheim. There are plenty of good spots to see fireworks from outside the park and you could listen to the soundtrack (at least Remember...) on your MP3 player.
However, the California Grill at the Contemporary Hotel at WDW does pipe in music from the dining room and they have a rooftop patio as well.

I believe people have (over the years) talked about watching the fireworks from the top floor of the parking structure. But I don't know if they have speakers or not.

If you are on the pool deck at the Paradise Pier hotel they play the music and you can sit and watch the fireworks....
We just stayed at Disneyland Hotel and our room had a perfect view of the fireworks. They played the music over the TV. |

I have had friends tell me that you can see the fireworks from Catal (in DTD) if you have a window seat but don't know about the music.
The other options are the pool area at the PPH. If you are staying concierge at the DLH or the GCH, they also have views and pipe in the music.

You can see some of the fireworks from the patio or window seat inside, but it's a very side view, and no, there's no music piped in there.

We could watch the fireworks from our DTD View Room at the Grand this summer and they had a television channel that played the soundtrack in time with the fireworks.
