can anyone tell me if they have traveled with a little one (around 14 months old) if there are rides at DL that she will be able to go on with one of us? I want her to enjoy the experience just as much as we do (even though she may not remember it!)

She can go on every ride where there isn't a height restriction. All of the Fantasyland rides, Pirates, Buzz, Jungle Cruise, Mark Twain, Pooh, etc. For a complete listing of rides with height restrictions, you can find them on disneyland.com

We went last year when our youngest daughter was 16 months old. There are lots of rides they can go on. Like DangerMouse said any ride without a height restriction your child will be allowed to ride. If your child gets scared easily there are a few rides you will want to maybe not go on. Like Pirates....the drop in the dark and the skeleton's in the first part of the ride might scare him/her. If you have the "POTC-The Black Pearl" dvd there is a video of the POTC attraction on the second disk. It is a little dated, but you can show it to your child and see how they react. I usually do this to get our kids used to it so it does not scare them when we ride it. It helps to show your child the Disney movies that correspond to the rides at Disneyland....such as Pinnochio, Snow White, Alice in Wonderland, Peter Pan etc. If you get them familiar with the characters it helps to tell them we are going to see Snow White on this ride etc. That way they don't get scared and they are excited. My kids love to watch Disney Movies so this really works for us.
There isn't as much for your 14 month old to do in DCA as there is in DL. A Bugs Land is good for that age so you can keep them busy there, but the "It's Tough to be a Bug" scared our little ones. Also Playhouse Disney Live and the Golden Zeypher are good for them.

POTC (wanted to take her early, now its one of her fav rides)

Small Workd (twice, every trip its at least twice)
Mad Tea Party (may be too much for 14 mos)
FL dark rides (Peter Pan, Alice, Snow White, Pinocchio (she hasnt been on Toad yet)

Winnie the Pooh

Tiki Room, Parades, etc are fun

Yup, that about sums it up. My DD is fearless at 19 months, so we took her on POTC and HM too. She loved them!

yeah, my little DD is pretty fearless, so I think she will do OK on most of them. My DS (6) is kinda whimpy when it comes to certain things....I thought he would be scraed of riding the big swings at Busch Gardens and he LOVED them, so I am hoping he will be OK with most of the rides...

We took my DD when she was 3 months old. She went on POTC, HM Holiday, Small World, Winnie the Pooh, All the Fantasyland rides expect Mr. Toad's Wild Ride and the Teacups. We did Honey I Shrunk the Audience and The Bug's Life Show. Plus, several parades. She enjoyed all of the Christmas lights, decorations, bright colors, and of course the characters. Although, she did sleep through most of Goofy's Kitchen. She is now disney obsessed.
We have been taking my daughter since about 5 months old. Even then she went on POTC and HM and pretty much anything without an orange triangle or height restriction. She loved it, I kept her in a Bjorn on the rides until she was old enough to sit in my lap without trying to jump overboard. She is 2 now and LOVES POTC, go figure, I was terrified of it until I was a teenager!
The carousels in both parks seem really fast to me for a toddler, and I am only 5'1" so I have a hard time hanging on to my daughter, so I jump on and ride with my daughter, I just sit behind her and put the seatbelt around her only, and I have never been asked to get off.
