Half of us on MYW Dining?
Since we would need to get two rooms if we stayed on-site, I've been thinking of booking half of us in one room with MYW dining, and half in another room without. I thought the seven of us could share four counter service and four table service meals a day. It seems like it would be plenty of food, and we can always pay out of pocket or use extra credits if not.
Does anyone know if that would work?

I think that if you are all booked in the same package, you all have to be on the plan. If you are booking as two "packages," I suppose you could split. I don't know about Disney, but some restaurants charge to split an entree (which is still way less than two entrees). You could not share a buffet or family-style meal, obviously. There is more food than we would usually order, but I figure we can store leftovers in our room frig for lunches on days when we don't plan to eat lunch out, and want to use the hotel pool, or snacks.

I was thinking of the same thing - but for us I don't think it would work because I'm hoping there will be AP rates out, in which case I'll get an AP, but the rest will be on MYW tickets, but we want the AP discount on both rooms, so they need to be linked together, etc etc etc

If you want to do the dining plan, you all must have the same tickets, and they will not allow you to have the discount with the dining plan. I think the OP is okay as long as you have it as two seperate packages, but that could mean the rooms would not be next to eachother, if that is important.

Actually when booking just tell them the truth- they are family and you want the rooms next to each other. A lot of people for magical gatherings book separately but want to be next to each other.
I think this is very doable and probably a very good idea considering that the amount of food on the dining plan is a LOT. I could never eat that much! LOL

I'd actually suggest completely explaining your plan to the reservationist so they can confirm whether or not splitting meals will even be permitted with the dining plans. As someone else noted, many restaurants do charge a plate fee if you split an item between two people, so it is at least a small possibility that they might prohibit it altogether on a discounted meal plan. Of course, you definitely would not be permitted to share if you go to any all-you-can-eat locations, of which there are quite a few at WDW.
That said, I'm not really sure how well this plan is going to work anyway. While the portions are fairly generous at many of the WDW restaurants, it does seem to be stretching things quite a bit to try and have 7 people try to get by sharing a total of 8 meals a day, particularly when 4 of those will be at the quick serve locations. You also need to consider the potential challenges of getting 7 people to agree on which 4 meals to get at each restaurant. I suspect that you will end up having to buy quite a few additional meals.
