    Chocolate Mousse for all! hehe

    Well now, we got the mickey cookbooks (vol 1 & 2) off ebay a few weeks ago, and I have been meaning to post the recipe for y'all.

    So, with today being a semi-significant day for me, i figured i would share the presents lol.

    I cant bring you all chocolate mousse, but heres the next best thing:

    So heres the real deal "official" recipe.

    Chocolate Mousse
    Boulangerie Patisserie - France EPCOT Center
    Yield : 3 cups

    5 Ounces semi-sweet chocolate, melted
    2 egg yolks, lightly beaten
    1/4 cup heavy cream
    1 teaspoon vanilla extract
    3 egg whites
    1/4 cup sugar

    Melt Chocolate in a double boiler over warm water. Remove from heat.
    Combine egg yolks and cream and gradually add chocolate, stirring rapidly.
    Then Add vanilla.
    Beat egg whites and sugar (in a seperate bowl) until stiff peaks form.
    Gently fold egg whites into choclate mixture.
    Spoon mousse into decorative mold or individual serving glasses and chill until firm (about 2 hours).


    Thats it, pretty simple recipe. I think the key lies in the chocolate, so we're going to experiment with several brands. hehe

    I had to change a few words before i sent it to my brother. Well first i had to multiply all the ingredients by 20, and replace "individual serving glasses" with the words "55 gallon drum".

    I still recommend stopping into France when you get down there, but at least this should help a bit until then.

    You might consider consulting Cook's Illustrated magazine to see if they've reviewed semi-sweet chocolate brands. I know I saw a review of unsweetened chocolates once. They basically prepare a recipe with various brands and then rate them. It's a great resource.

    All this talk of shocolatte mousssse reminds me of a high school project my buddy and I did for French class. We made up a batch of shocolatte moussse for the class -- went over pretty well.

    It wasn't until I read your post that I remembered doing the same sort of thing, but the whole class went to the Home Ec rooms and made it as an in-class project. The recipe we were using called for "strong coffee" and since all we had was instant, and nobody was a big coffee drinker (this was pre-Starbucks), we ended up making it WAYYY too strong and the mousse ended up being too coffee flavored.

    Don't worry folks, Mikey's actually pretty accurate - not mean.
    If you've ever seen us (just ask poor Kadheil) - you'd soon realize that the term "individual serving" does not apply in our world. 55 gallon drum is fairly accurate, but what are you gonna have Mikey? (I'm not sharin').
