I had the privilege of visiting Disneyland Paris for a couple hours a few years ago, during a layover in Paris. I thought I should really try to experience Paris itself, but I would have kicked myself if I had passed up the opportunity to experience two rides based on Jules Verne and Phantom Manor. The surprise hit for me, however, was the castle... You are absolutely right: so much is added by being able to explore the castle (at the time, the walkthrough in Disneyland USA had not been reopened yet). Adventure Isle was also amazing and I heartily enjoy the fact that Disneyland Paris embraces many of the older films like 20,000 Leagues, Swiss Family Robinson and Treasure Island.
For the record, I was still able to see a bit of Paris as well... Notre Dame and the Eiffel Tower, as well as getting lost trying to find my way there. However, it was only just enough to make me want more. My girlfriend and I are going to Paris in May for an actual vacation. Spending a full day at Disneyland is definitely on the itinerary! I can't wait to see more of the park and take my time with it (as well as see more of Paris itself, and the real castles of the Loire valley, and Jules Verne's home at Amiens).
