How does this work? Obviously they can't have too many people in the park at once, but once the crowds start to thin out, does that mean that an AP STILL couldn't get in? Does it depend on the number that are in the park at the time, or is there a magic number of "entrance events" and after those are done, it's done?

The turnstiles count everyone who enters and leaves the park. When it reaches a certain point, they stop selling one day tickets, then they stop selling multiday tickets, then they stop allowing new entries, then they stop allowing all entry. If an AP arrives at a time when they have restricted it to only new entries, you will be advised you can enter DCA. Usually, around 5, they will go back to allowing everyone in. This is after the parade and people head out. They park will not reopen until the Anaheim Fire Marshal ok's it. The Fire Marshal shuts the park down and allows it to reopen.

I'll be at the park next weekend, and Saturday is a block out day for my AP so I'll need to buy a one day block out day pass. We won't get to the park until about noon on Saturday (4/5). Do you think I need to be concerned about being able to buy a ticket? I know the park will be busy, but that busy?? Any thoughts?

Probably not. When we were there on Wednesday, they were telling APs to get handstamps. This is the first step to restricting new entries. They weren't restricting new entries yet, but just in case they decided to later, an AP who'd been in the park earlier in the day would need a stamp from Disneyland to get back into DL.
