Going to Disney at end of March...and sooooo ready. I am from Chicago and in the last week it has snowed over 4 inches and we have had sub 0 temps with wind chills in the -25 degreesarea!! We have been many times but this will be wife's and mine first time without any kids.
Does anyone have any suggestions for this new type of adventure!! We are staying at Port Orleans-River Walk

Have a great time. I think you'll probably enjoy Port Orleans Riverside.
First, have you made your Advanced Dining Reservations (ADRs)? Since you're going at a farily busy time of the year (since Easter is March 23rd), you are likely to need to have a reservation to be able to eat at the more popular locations during prime dining time, and may even have some issues even if you go to non-popular during prime dining time.
POR has a carriage ride you can take, that seems to be nice and romantic - and Downtown Disney is just a short boat ride away.

As much as I'm sure you love your kids, you're going to really enjoy the place without them. The whole vacation becomes not so much about riding the most rides, giving you time to slow down and see the stuff that you don't normally get to do with the kids. Take time to see shows, maybe take an afternoon where you just visit the hotels, stay late after the fireworks are over and explore a totally empty park (this works really well in Epcot!).
Sounds like a fun trip!
