We plan to travel in March, staying at either Beach Club or POR. DH and I want the dining plan, BUT we don't want our 2 and 5 year-olds to have it because they would waste so much food. It would actually be a waste of money. I would rather order one entree for them to share. If we book all four of us when making the reservation, they will include the DP for all four of us, right?
Is there any way to get around this so that the dining plan is only for us two adults?

The two year old is not included, for either tickets or DDP.
The requirement is that all people on the registration, age three or older, must have the same package; this includes both tickets and dining.
And if you do not have the 5yo on the package there will be no room key and therefore you will not be able to take the 5yo to any EMH as they scan the room keys for each person.
As far as the 2yo. At all you can eat locations, including buffets and table service, the child will get their won plate and beverage at no charge. All other meals it is expected that the 2yo will share with others; there may or may not be a charge for beverages, but technically anything from a menu for the 2yo will have to be paid for.

That's great to know. Thank you!
I was able to find a room at BC, but room only. It says on Disney's site that they're sold out when I do a vacation package search.

Try giving them and call and keep re-checking the site. I spent six months on and off the official Disney site before actually booking through it and it does change, prices and offers and everything, periodically. The package I booked in now costing more than £700 more....

Before you commit to the Dining Plan, I strongly recommend that you make your AR's now, and see what is available. Make sure you can get into the table service places you want, before you pre-pay for your meals. If most of the places you want are fully booked for the times you want to eat (as in 9PM with two young children would not be a good thing), and you can't be sure to have reservations to use up those table service credits, I would skip the plan for this trip. See if you can get the reservations first, then decide if the plan will work for you. Do not go without having reservations, expecting to be seated if you just walk in. Most table service places will be booked, for all normal meal times, and others will have long waits, not a good thing with kids.

VERY good tip! That is very important to consider! Thanks! :)
