I am making whole grain brown rice tonight. This is not something I normally serve but I am trying to stick with the complex carbs. Does anyone have any suggestions for low calorie, low carb ways to serve this dish? Thank you. :)

Top with low-fat chili, either from a can or homemade.

I like it with a little salsa, reduced fat sour cream and 2% sharp cheddar. It doesnt take very much of any of those to give it great flavor. Could probably skip the cheese and not notice.

Or cook the rice in chicken broth, and add some green onion/ mushrooms for flavor.

I serve it exactly as I would white rice. I just substitute one for the other in recipies.

There ya go. Tonight, for example, we had a stirfry (chicken, summer squash, celery) over brown rice.

I like bits of chicken and lots of garlic....say stir fry some chicken with garlic, & a touch of olive oil. Toss in with or serve over the brown rice.

I like to throw in a little broth -- either chicken or vegetable, along with mushrooms, vegetables and slivered almonds.

I cook it in chicken stock with half a can of El Pato (http://www.mexgrocer.com/1276.html), 1 tsp ground cumin, 1 tsp ground New Mexico chili power, 2 cloves crushed garlic, 1/2 cup of chopped onions (green, brown or white). Serve it with grated cotija cheese over the top.

The secret to great brown rice is to cook it for an hour and make sure that you add more water/liquid than you would for white rice. ;)

This time of year you can add some fresh chopped Hatch New Mexico green chilis too!

I added some chicken broth to the cooking water and threw in some broccoli for the last five minutes or so of cooking time last night. Very tasty.
