My daughter has a love/hate relationship with the stroller.
This means we may park the stroller vacant, near an attraction for long periods of time. Would WDW object to us using a bike lock for our stroller? Does anyone feel this is necessary?

Wasn't necessary for us in DLR last year.

We often parked the stroller in the designated parking areas and then went on about our business. Took all of our important stuff with us and away we went. Never had an issue

The bike lock may get you into trouble as I know that sometimes they do move the strollers around from time to time (cleaning, parades, special events, etc.).

Security will likely remove anything that has a bike type lock on it.

If you really feel like you need to lock it- lock it to itself. Run a bike lock through a wheel (providing they are the open type) then around the frame. That way they can pick it up and move it or roll it on the two non-locked wheels if it is in the way. But, no one can steal it. Most people never have a problem with their stroller disappearing.

This is what I plan on doing, and I will also run the bike lock through our backpack that has non-valuable items in it like snacks, wipes, change of clothes, etc....hopefully just to deter anyone from grabbing it while we're on a ride.

You really shouldn't have anything to worry about, but as long as you don't lock it to something, cast members will just roll it where they need to if they need to straighten up the stroller parking area.
