I like the sound track from "Robin Hood Prince of Thieves" the one with Kevin Costner. The song by Bryan Adams is "our" song - the "love song." I also like the soundtrack from "Spirit." Guess I'm partial to Bryan Adams, yet I don't have any of his music - go figure.
I still have my "Jungle Book" soundtrack from the '60's (just the record, the cover is long gone). The girls and I like to buy the soundtracks from movies we enjoy. The newest version of Parent Trap is also good. Forest Gump, Lilo and Stich, The Santa Clause 2 (It is still in my cd-changer - I listened to it not long ago - kids thought I was nuts!)

Let's see...I don't really own too many soundtracks now that I think about it. You'd think I'd have more with a cd collection that's getting up near 200!
I think I have 4, and I love them all dearly...so here they are...
Dare Devil
Phenomenon
Chicago
Runaway Bride

I love the soundtracks to The Incredibles and Little Shop of Horrors (although, truth be told, the Broadway and Off-Broadway versions are so much cooler to listen to.) I'm also trying to get a hold of the Eternal Sunshine of the Spotless Mind soundtrack. I own so few CDs, though.

Magnolia - Aimee Mann
Singin' in the Rain - So many good fun songs in this one.
Rushmore - A quirky set of insturmentals from the guy in Devo, combined with great 60s pop/rock tunes
That Thing You Do - for all the faults of that movie, and there were quite a few, they nailed the music from the era
Oh Brother, Where Art Thou? - stupid movie, great music

i finally read this thread and no one's mentioned The Sound of Music? (that one was the first one that popped into my head).
i've never been a big movie sound track person, but i did own Pulp Fiction's so that would have to get my vote besides the musical i mentioned.

The music that was playing during the huge fight scene at the beginning of Gangs of New York had a very interesting sound to it. I liked the sound of it.
