We are planning to book a 7 night WDW adventure for late September SOON!!!! I'm so excited to just book the trip! My DH has diabetes and normally manages it just fine, but there are the rare occasions where his blood sugar drops too low and he needs sweets right away. We are wanting to stay at Riverside but the resort is rather large so I wold feel better is we could request a room near the food court building. I have read that you can make room/building requests when you book. I was just wondering if anyone could give me more info on this or if you know the best way to try to get the room/building you want it would be greatly appreciated!!:D

I always book either over the phone, or with a Disney specialist travel agent. When you book, you can request room preferences right then, and that's the best method any more. Just say you have a request to be near the food court because you have a diabetic in your group who you'd like to be able to get food for if there's an issue. They probably won't write down that the request is for diabetic, but they should note that it's for medical reasons. But I think adding the information on WHY you want it for medical reasons will allow them to believe that it's a 'real' medical request, and not someone saying it's medical so they get what they want. (People will do that at the Value resorts to get a free refrigerator. I find that just as despicable as parking in an handicapped parking spot, but it's 'not illegal' so some people don’t have the moral issue with it that I do.)
There MAY be a way to note it if you book online, but I don't know for sure.
But, speaking of refrigerators, your room will have one in it (All Moderate and Deluxe resorts do!), and you might want to put a couple of emergency items in there when you first check in (like some OJ, or the like).
Disney is very good at making accommodations for medical requirements - just make sure you don't need a wheelchair accessible room - or they might put you in one just because it said 'medical' on your room request. (I have been assigned those rooms, NEVER by request, but I am always hoping that there's not someone checking in that might NEED it. I assume Disney knows what they're doing when they put someone in an Accessible room when it wasn't requested - but you never know if someone forgot to mention it...)

Can you keep some non-perishable items in your room for that kind of emergency? Or ask for a refrigerator in your room?

I'm sure we will have some things in the room. It's just my paranoia about if something could happen. I'm sure he will be fine, but being away from home and in a large resort just made me think about it. I will call an agent just to make sure. Thanks for the heads up on the handicap room. I like to have the option to soak my tired feet in the bath and I don't believe those rooms have tubs. I am sure everything will be fine. It's more for my peace of mind than anything else. Thank you very much for the information!

As a diabetic I will always carry a couple of emergency food packs in my suitcase. I will generally buy the prepackaged chicken salad that comes with a can inside a plastic package with some crackers in it and a small plastic spoon. It does not require refrigeration and will give me immediate carbs and protein.
And since you are in a moderate resort there will automatically be a refrigetor in the room, you might want to get a bottle or two of Orange Juice to keep in the room.
There is never any need for an accessible room or special treatment just for diabetes.

Not at a moderate. The refrigerators are standard.
