OK, so here's my situation....it's not the kid(s) that don't want to go on certain rides, it's my husband. I know that my princesses and I will be doing Its a Small World and Tea Cups on our own, but can we all fit on Dumbo together? My girls are pettite 4 and 6 year olds and my hips aren't too wide yet. Please don't mention that the girls can do the ride on their own, I've never ridden Dumbo and this is finally my excuse to wait in line!
What other rides would we be able to do without Daddy?
Also while I have you, I have a question on parent swapping. Do the kids have to wait in line?

re: Dumbo- Three should work. I've taken my 4-year-old-who's-as-big-as-a-6-y/o and 18 mo old in the same elephant. I've seen two parents with a little one between them on an elephant, so the three of you should be ok. It might be tight, just to warn you.
Tea Cups are definitely doable. I did teacups on Sunday with me, another adult (a lovely friend,) and the boys.
There are lots of rides you can do without Daddy- it might be easier to say which rides you can't do without Daddy, and your little ones may be too short or timid for many of those.
Re: Rider Switch-- I think the answer to your question is "no." If a child is too short to ride, say, Big Thunder Mountain, the group that's tall enough to ride, gets in line, while one parent stays off the ride with the children who are not tall enough (or are feeling timid.) When the first parent gets off the ride, the next parent uses the child swap pass to enter either the Fast Pass line or the exit of the ride.
In other words, children not riding rides with Rider Switch do not have to stand in line while their parents ride.
Clear as mud?

Avoid the Dumbo line by riding it either first or second. Get into the park before the official opening time and walk immediately to the end of Main Street, when they drop the rope at the end of Main Street, walk immediately to Peter Pan (which you can ride with your two daughters easily) and when you get off, walk straight to Dumbo. You will have them both ridden with a minimal wait. Later in the day, these could easily take 2 hours of waiting total to ride.
Peter Pan, Snow White, Mr. Toad, Pinocchio, Tea Cups, Small World, Dumbo, Alice are all fine for a group of one adult and two small children.

It will be tight, but do able. I would suggest that you sit closest to the entry openning.

Excuse me for not saying thank you for all your helpful replies. Especially about sitting near the entry opening. Just read where a kid fell out of the Roger Rabbit ride and got trapped underneath the car. Yikes!
One more week for us! The girls have shortened the Christmas advent calander to count off the days 'till Disneyland.

Since this tragic incident, they have put doors on Roger Rabbit...as well as put safety gates at ride entry locations...:)
